About Bull's Blood Olympia
Bull's Blood Olympia is a reselection of the old Bull's Blood beet made specifically for commercial baby-leaf production rather than for roots. The improvement over standard Bull's Blood is pigment: darker leaves, and more importantly more evenly coloured ones across a whole stand, which is what a salad mix gets graded on. It also holds that dark colour in warm weather, where the original tends to wash out toward green as temperatures climb, and that heat stability is the practical reason to pay for the selection. Territorial lists it at 35 days to baby leaf and offers it as organic seed. No root maturity is published for the Olympia strain, which tells you plainly how the breeder intends it to be grown.
