About Carillon
Carillon is a cylindrical, Formanova-type beet positioned as an upgrade on the long-standing Cylindra. The case for cylindrical beets is kitchen geometry: an even-diameter root gives uniform slices from end to end and packs far more usable flesh per foot of row than a globe. Territorial rates Carillon at 65 days with slender 6-inch dark red roots and specifically credits it with better foliar disease resistance than Cylindra, while Stokes lists it at 60 days relative maturity and describes an extra-long 10 inch / 25 cm root. It is an open-pollinated variety rather than a hybrid, so seed can be saved. Stokes also rates its foliage as strong enough for mechanical harvest, which in a garden translates to tops that do not snap off when you pull.
