Ping Tung Long

Ping Tung Long is a Taiwanese heirloom eggplant named for the Pingtung region, valued for its long, slender fruits and heavy, dependable yields. The fruits are very long and narrow, often twelve inches or more, with thin, glossy lavender-purple skin and tender, sweet, mild flesh that has few seeds. The delicate skin needs no peeling, and the flesh cooks quickly, making it excellent for stir-fries, grilling, and Asian dishes. Plants are vigorous, productive, and notably resilient, tolerating heat and humidity and showing good disease tolerance compared with many eggplants. Ping Tung Long is a favorite among gardeners in hot, humid climates who want reliable production of tender Asian-type fruit.
