Fennel (Foeniculum vulgare) is a hardy, perennial herb with a rich history of culinary and medicinal use. Belonging to the carrot family (Apiaceae), it is widely recognized for its feathery leaves, yellow flowers, and distinct anise-like flavor. Native to the shores of the Mediterranean, fennel has become naturalized in many parts of the world, particularly on dry soils near the sea-coast and on riverbanks. This aromatic plant can grow to heights of up to 2.5 meters. It features a hollow stem, finely dissected, almost hair-like leaves, and flowers produced in terminal compound umbels. The fruit is a dry seed from 4–10 mm long, half as wide or less, with a grooved surface. One of the most notable features of some fennel varieties is the swollen, bulb-like stem base that is used as a vegetable. Every part of the fennel plant is edible, from the bulb to the fronds and seeds. The bulb is a popular vegetable that can be eaten raw in salads, or cooked in a variety of dishes. The leaves are used as an aromatic herb, and the seeds are a common spice, particularly in Italian and Indian cuisine. Medicinally, fennel has been traditionally used to treat a wide range of ailments, including digestive problems, and is known for its carminative properties, which help to relieve gas and bloating.
