About Florence fennel

Florence fennel (Foeniculum vulgare var. azoricum) is grown mainly for its thickened, bulbous leaf base, which is eaten as a cooked vegetable. Also known as bulb fennel, it may be difficult to grow in parts of the South. The bulbs can be eaten raw, sliced or grated into salads, or cooked in dishes, and can be stored in a cool location for several weeks.
