About Ascolano
Ascolano is a cold-hardy olive cultivar from the Marche and Tuscany regions of Italy, also grown in California for olive oil. It produces large fruit and is self-fertile, with recommended pollinizers including Carolea, Manzanillo, Mission, or Picholine. It is used as a table olive and to make the Italian snack olive all'ascolana, in which the olives are pitted, stuffed with seasoned meat, then battered and fried.
