About Sevillano
Sevillano originated in the Seville region of Spain. Spanish missionaries brought the trees to California in the 1800s and planted them in Northern California. The cultivar produces fruit ranging from extra-large to colossal in size. Its low to moderate oil content makes it well suited for canning or pickling, and because the olives are easily pitted, they are also used for stuffing with ingredients such as cheese, garlic, nuts, or peppers.
