Purple Majesty is a deep-purple potato developed by the Colorado potato breeding program and released in the mid-2000s, bred for intense pigmentation and uniform tuber quality. Both skin and flesh are a vivid, uniform purple driven by high anthocyanin content, and the color is more stable through cooking than in many blue varieties.
