About Portugal
Portugal, also called Lusitanica, is an old European quince cultivar valued for its large, elongated pear-shaped fruit and its flesh that turns a particularly deep red when cooked. This rich coloring makes it especially prized for jelly, quince paste, and preserves where a strong color is desired. The tree tends to be somewhat less hardy and more vigorous than some varieties, and it is a classic choice in milder European regions. The fruit is highly aromatic. Portugal has a long history in cultivation and remains sought after by cooks specifically for the beautiful ruby tones it lends to preserves and membrillo.
