About Costata Romanesco

Costata Romanesco is a prized Italian heirloom zucchini renowned among chefs and gardeners for its exceptional flavor and firm texture. The plants produce distinctly ribbed, pale-and-dark-green flecked fruits that show prominent ridges along their length. Harvested young, the flesh is dense, nutty, and richly flavored, considered by many the best-tasting summer squash, and it holds its texture well in cooking. The large male blossoms are also excellent for stuffing and frying. Costata Romanesco yields somewhat less than standard zucchinis but rewards with superior taste, and its ribbed slices are decoratively scalloped. Maturing in about 60 days, it is a strong garden performer. As an open-pollinated heirloom, its seed can be saved. It is a favorite of gardeners who prioritize flavor and quality over sheer volume.
