About boniato

The boniato, also called the tropical sweet potato, is popular in Cuban cuisine. It is distinguished by pink to burgundy-colored skin and creamy white flesh, and is fluffier, drier and less sweet than orange-fleshed sweet potato. With a flavor some find similar to chestnuts, it can be used as a sweet potato substitute in almost any recipe.
