About Jersey
Jersey, often called Yellow Jersey, is an old American heirloom sweet potato with pale skin and dry, mealy flesh very different from the moist orange types. Its cream to yellow flesh is starchy and firm, holding its shape well when cooked, and it was traditionally the standard sweet potato in the northern and mid-Atlantic states before moist orange varieties came to dominate. Jersey is a drier, less sugary potato that behaves more like a floury white potato, favored by those who dislike overly sweet or wet sweet potatoes. It stores well and has a devoted following among heirloom growers who value its old-fashioned, mild flavor and firm, dry texture for baking and frying.
