About Hamburg

Hamburg (root) parsley (Petroselinum crispum tuberosum) has white roots that look like young parsnips and are used similarly in cooking. It looks similar to Italian parsley, and although officially a biennial, it is usually grown as an annual. The roots are typically harvested in late fall, after a growing season of about 3 to 4 months, and can be left in the ground until needed since they are frost-tolerant.
