About Savory

Savory (Satureja) Savory, known by its scientific name Satureja, is a genus of aromatic, herbaceous plants belonging to the mint family, Lamiaceae. This genus is closely related to other well-known herbs such as rosemary and thyme, and it originates from the sunny regions of Southern Europe, the Mediterranean, North Africa, and the Middle East. The two most common species are Summer Savory (Satureja hortensis), an annual, and Winter Savory (Satureja montana), a perennial. While both are used in cooking, they have distinct flavors and growth habits that make them suitable for different culinary and gardening purposes. Savory plants are typically low-growing, reaching heights of 15 to 50 centimeters. They can be either annual or perennial herbs or subshrubs. The leaves are small, usually 1 to 3 centimeters long, and linear in shape. The flowers are small and tubular, appearing in whorls along the stem, and range in color from white to pale pink or violet. Summer Savory is a delicate annual with a sweeter, more peppery flavor, while Winter Savory is a semi-evergreen perennial with a more pungent, pine-like taste. Both Summer and Winter Savory have a long history of culinary use. Summer Savory is a key ingredient in the classic French herb blend "Herbes de Provence" and is traditionally used to flavor beans, lentils, and other legumes. Its milder flavor makes it a versatile addition to soups, stews, and meat dishes. Winter Savory, with its more robust flavor, is often used in heavier dishes like sausages and stuffings.
